Margin Recovery Desk — Weekly Margin Control for Restaurants | ElevexMedia
Margin Recovery Desk · US restaurants

Your software shows the numbers. We make sure they turn into actions.

Every two weeks: three actions, one owner, one deadline — and a verification against your numbers. We work on top of your Toast, Square or MarginEdge. We don't replace them.

Every two weeks

What you get every two weeks

Three priority issues

A written brief that names the three problems costing you the most, based on your own POS and supplier data.

A specific action for each

What to do, who on your side owns it, and the deadline.

Verification in the next brief

We check your numbers to see whether each action worked.

Everything in writing

A document you can forward to your manager or partner.

How it works

Three steps, every two weeks

1

You send your data

Every two weeks: your POS export and supplier invoices, in Excel or CSV.

2

We analyze it and write the brief

Every number is checked by hand, not by an algorithm. Your brief is ready within 2–3 business days of receiving complete data.

3

You get your action plan by email

In the next brief, we verify the results and move to the next issues.

Why it works

A report that ends with a chart leaves the work to you. Ours ends with an owner and a deadline.

Every recommendation is checked against your numbers in the next brief. We track each case until it's resolved — and we don't count potential savings as recovered cash.

If your data needs a deeper look than the brief allows, we say so in writing instead of guessing.

Software vs. us

What your software will never do

Your POS can calculate food cost. MarginEdge can flag a price change. AI can send you a daily recommendation. All of that is useful. But none of them will write the new portioning standard, give your kitchen manager the materials to train the team, require photo confirmation from the line, and check the numbers to see if the behavior actually changed.

Software shows you the problem. We change how your team works — and we prove it with your own data.

AI finds it. We make sure it gets fixed.

From practice

Two common issues, from previous operations work

In my previous operations work, I reviewed supplier invoices for a restaurant group and found two common issues:

  • A supplier changed the packaging size from 40 lb cases to 30 lb cases while keeping the same invoice price. The restaurant was unknowingly paying more per pound.
  • Sauce usage was 22% higher than expected, with no increase in sales — a sign of inconsistent portioning.

We corrected the packaging issue with the supplier and introduced a simple portioning checklist. The result: roughly $400 per month in recovered costs across the group, without changing the menu or the POS.

The math

Does it pay for itself?

The service costs $450/month per location. If the brief helps you correct one or two cost issues a month — a supplier price variance, a portioning error, overtime that nobody planned — the service can pay for itself. We don't promise specific savings. We show you what we find, and you decide if it's worth it.
